This olive mill was borne out of the curiosity of its founder, Pedro L. Onsurbe González, about the oil world, his love for the countryside and his tireless need to achieve a clear objective: obtain an authentic "natural olive juice of the highest quality".

Thus, in 2000, he created this olive press, the main objective of which is to offer a unique product to the most refined customers from throughout the world. He acquired about 22 hectares of land boasting production of more than 4,500 different olive varieties, including Cornicabra, Picual, Manzanilla, Arbequina and the recently transplanted Italian Frantoio variety, and built a press on the farm in the tradiional "Pago" method of medieval olive producers.
